Talise began with one greenhouse of habaneros in Krootuse, South Estonia, and a refusal to buy boring sauce. It is still a two-person operation: we grow the chillies, run the ferments, cook every batch and glue on every label ourselves.

The name on the label — chilli, punk & moonshine — is the whole method. Chilli grown from seed in Estonian soil. Punk because forty-litre batches answer to nobody. Moonshine because everything worth doing here is done quietly, at home, properly.

The farm stays in Krootuse; most Saturdays you will find us at the Balti Jaam market in Tallinn, letting strangers try Trauma against our advice.
