Trauma butter wings

Roast the wings dry and hot, then toss in Trauma butter and serve with cold sour cream — the contrast does the work.
Ingredients
- 1 kg chicken wings
- 2 tbsp neutral oil
- Salt
- 80 g butter
- 1 tsp Trauma (or to taste)
- Sour cream, to serve
Method
- Heat the oven to 220°C. Pat the wings very dry, toss with oil and salt, and spread on a rack.
- Roast 35–40 minutes until deep golden and crisp, turning once.
- Melt the butter, whisk in the Trauma off the heat.
- Toss the hot wings in the butter and serve with cold sour cream.
